A few days before Father's Day, my sister and I headed to S&R after school/work for a little diet food shopping. And so a jar of artichoke hearts went into the cart, a bag of quinoa, cold cuts, a couple of bags of bagels, a jar of mandarin oranges; plus a few other household items for mom.
On the way to the cashier, we passed by the alcohol section and I saw it - Jack Daniels HONEY. I've looked for this in the liquor stores I've had any business visiting, and never found it. I quickly added two bottles of the JD Honey to our cart before I changed my mind and we headed home.
FF to Father's Day. I swore to myself that I will make a dent in the two bottles before the weekend was over. I did, but I ended up cooking with it :)

Jack Daniels Surf n Turf
use any meat of your choice - I used prawns, pork liempo, and chicken fillet
For the marinade, I couldn't find the measuring cups so I used a demitasse.
Tip: cook the marinade to make a dipping sauce.

- measure and mix [almost] equal parts of the JD Honey, Dijon mustard, soy sauce, worcestershire sauce, coconut sugar (because Dad's diabetic)
- add 1/2 demitasse of minced garlic to the mixture
- season with pepper
- portion according to the number meats you're using - i split my marinade into three for the seafood, pork, and chicken

Rice Pilaf with Stewed Tomatoes, Baby Portabello Mushrooms, and Pistachios

- saute about a teaspoon of chopped garlic in olive oil
- add about a cup of sliced portabello mushrooms
- add 1/2 cup of canned stewed tomatoes
- mix in about 4 cups of cooked white rice and stir until everything is evenly colored
- add about a quarter cup of chopped pistachios
- season with salt and pepper
Aside from the surf n turf and the rice pilaf, I also used roasted corn chowder with chipotle (straight from the box!), but added it to beef burger patties that were broken up and frying. Since the chowder was instant and low-sodium, the marinated beef patties lent a dimension of flavor that I wouldn't have gotten from the soup alone. I added a portion of one chicken bouillon cube for added flavor. tr
